  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1/2 tsp poppy seeds
  • 3 tbsp milk
  • 1 tbsp vegetable oil
  • 1 tbsp fresh lemon juice
  • 1/4 tsp lemon zest
  • 1/4 tsp vanilla extract
  • Optional Glaze:
  • 2 tbsp powdered sugar
  • 1 tsp lemon juice

Instructions
 

  • In a microwave-safe mug, whisk together flour, sugar, baking powder, salt, and poppy seeds.
  • Add milk, oil, lemon juice, lemon zest, and vanilla extract. Stir until smooth and well combined.
  • Microwave on high for 1 minute and 30 seconds, or until the cake is set and springs back when touched.
  • For the glaze, mix powdered sugar and lemon juice in a small bowl until smooth. Drizzle over the cake.
