- 2 cold hard-boiled eggs
- 1 tablespoon mayonnaise
- 1 teaspoon snipped fresh chives
- 3 pinches salad cress
- Sea salt and white pepper to taste
- 4 slices thinly sliced white bread
Peel the hard-boiled eggs and mash them with a fork until finely crumbled.
Stir in the mayonnaise, chives, and salad cress until well combined.
Season with sea salt and white pepper to taste.
Spread the egg mixture evenly over 2 slices of bread.
Top with the remaining bread slices and press gently.
Trim off the crusts and cut each sandwich into three finger sandwiches.
Serve immediately.
