Ingredients
  

  • 2 cold hard-boiled eggs
  • 1 tablespoon mayonnaise
  • 1 teaspoon snipped fresh chives
  • 3 pinches salad cress
  • Sea salt and white pepper to taste
  • 4 slices thinly sliced white bread

Instructions
 

  • Peel the hard-boiled eggs and mash them with a fork until finely crumbled.
  • Stir in the mayonnaise, chives, and salad cress until well combined.
  • Season with sea salt and white pepper to taste.
  • Spread the egg mixture evenly over 2 slices of bread.
  • Top with the remaining bread slices and press gently.
  • Trim off the crusts and cut each sandwich into three finger sandwiches.
  • Serve immediately.
