- For the Cake:
- 9 tbsp self-rising flour
- ¾ tsp cinnamon
- 1½ tbsp granulated sugar
- ⅛ tsp salt
- 5 tbsp water divided
- Cooking spray
- ½ tsp vanilla extract
- For the Frosting:
- 3 tbsp powdered sugar
- 1 tsp soy milk
- ¼ tsp vanilla extract
Prepare the Frosting:
Gradually add soy milk and vanilla extract to the powdered sugar, stirring continuously until the mixture is smooth. Set it aside.
Prepare the Mug:
Lightly grease a mug with cooking spray. Set it aside.
Make the Dough:
In a bowl, combine flour, salt, and vanilla extract. Gradually add 4 tbsp of water to the flour mixture until you form a soft dough. Adjust flour or water to get the ideal consistency.
Roll the Dough:
Dust a work surface with a bit of flour. Roll the dough out into a 1cm thick long strip that is about 4 inches in width.
Add the Filling:
Sprinkle sugar and cinnamon over the dough as you fold it into a roll. Lift the dough carefully and place it in the lightly greased mug.
Assemble and Cook:
Scatter the remaining sugar and cinnamon onto the dough. Pour in ½ tsp of water, then microwave it for about 1 minute and 10 seconds.
Serve:
You can either turn the cinnamon roll onto a plate before pouring in the frosting or pour the frosting straight into the mug and enjoy it as you would any mug cake.
