Sandwich Filling
- 2 tablespoons olive oil
- 8 oz chicken breast thinly sliced
- 1 large white onion thinly sliced
- 1 medium red bell pepper thinly sliced
- 1 teaspoon Worcestershire sauce
- Salt and freshly ground black pepper to taste
Assembly
- 2 large bread rolls split
- 4 Romaine lettuce leaves
- 1 tablespoon fresh dill chopped
Heat one tablespoon of olive oil in a large skillet over medium-high heat.
Add the sliced chicken and cook until browned and cooked through, then remove the chicken from the pan and set it aside on a plate.
Add the remaining tablespoon of oil to the same skillet over medium heat.
Toss in the sliced onion and cook until it begins to soften, then add the bell pepper and continue cooking until the vegetables are tender.
Stir the Worcestershire sauce and the cooked chicken back into the pan, tossing everything together for a minute or two until heated through.
Season the mixture with salt and pepper to taste.
Layer the lettuce leaves onto the split rolls and top with the warm chicken and vegetable mixture.
Sprinkle the fresh dill over the filling before closing the sandwiches and serving.
